LET'S TALK METAL

Proper use & care of your ScratchMadeSteel is vital for ensuring & maintaining perfect results, every time. Here are some great tips on how to look after your purchase.

Your steel comes pre-waxed

 & ready for use, but it's important to re-oil from time to time. This will ensure optimum cooking efficiency & also prevent rust. A good quality sunflower oil or light olive-oil is perfect due to its high smoke-point.

Make sure your steel is clean & dry, then apply few tablespoons of oil to the surface. Using a tea-towel or your hand - spread the oil so that it coats the surface. Do this for both sides.

Bake in your oven at 200c for 1 hour, then leave to cool before removing.

Launch your pizza onto the steel

Turn half-way through cooking to ensure an even bake - 3 to 5 minutes.

Switch back to conventional bake mode for 1 more minute if you want a crispier base.

Place your steel on the top 1/3 rack of your oven and pre-heat at maximum temperature for at least 30 minutes.

Switch to grill/broil and let the steel get red hot (5mins) - broiler will cycle on & off.

cleaning

After most bakes, you can simply wipe away the leftover flour & semolina with a dry cloth (once cool). Spills & splats can easily be removed with soap, water & a soft scourer. Just be sure to dry your steel afterwards, apply oil and bake for 1hr to avoid the possibility of rust.

storing

As the steel is quite heavy, many people choose to leave it in the oven. This increases the thermal mass when cooking. Otherwise, simply store in a dry place or in the protective VCI  paper that your steel was provided in.

Please note that your steel will develop a darkish colour (patina) as it is used. This is normal and will help protect your steel for years to come.
