I've seen cheaper pizza steels out there. Why choose ScratchMadePizza?

In principle, the thermal properties of a similar carbon steel (6mm) will still yield great results, but it's the 'finish' that sets ScratchMadeSteel apart. Cheaper steels are often full of contaminants and do not go through the rigorous process of shot-blasting to remove mill scale, rust and properly clean the material for use. As a result, they tend to have a dull or matte finish and will clearly show scratches from the production process. ScratchMadeSteel also comes pre-waxed to ensure proper protection and longevity, whereas cheaper options often do not. 

 

I noticed that your baking / pizza steel is carbon-based but I've seen others made of different types of steel? What's the difference?

Carbon steel is a much more effective material for heat retention and conductivity compared to something like stainless, which offers only 1/3 the performance in comparison. This allows you to cook pizza and bread much faster and will also out-perform other materials when cooking multiple items one after another. 

My steel has slowly darkened - is this normal?

Over time your baking steel will darken in colour and develop a 'patina' that will actually help to protect it. This is unavoidable - but the laser etching process of the ScratchMadePizza logo means that it will always be visible even after years of use. 

Why is it so heavy?

The ScratchMadePizza signature baking steel is 6mm thick, weighing in at 6.1kg. Other providers offer even thicker sizes (up to 10kg) but I believe 6mm to be the best balance of heat retention, transfer and recharge time. It's the only size I'll ever use - take a look at some examples of bakes on Instagram

My steel has rusted! What do I do?

A properly seasoned baking steel will never rust, but if you do encounter any then simply use an abrasive scourer to remove any imperfections and then clean, dry and re-season with oil. Choose the best oil for you that has a high smoke point such as sunflower.
